Another beautiful heirloom wheat grown by Farmer Mai Nguyen in Sonoma, CA. Chiddam Blanc de Mars is a soft white wheat with flavors and aromatics of tea leaves and fresh spring herbs. We love it for pastry and quick breads, but also use it in plenty of sourdough bread formulas. In turn of the century France, this was the wheat that made baguettes. Give it a good strong partner, like Hard White, and don’t push the hydration as much. Store this one cold – freezer if you can – due to higher moisture content in the grain. Very limited quantities.
