Fresh Milled 100% Extraction (100% Whole Wheat) Hard Red
We are currently milling California grown hard red wheat. WB9229 is the name of the wheat variety, and Amorojo is the name we’ve given to our flour. This has been our locally sourced hard red for a few years now, and as always the flavor is mellow, malty, nutty and delicious. This is consistently our strongest whole wheat flour for bread, whether leavened by a sourdough starter or commercial dried yeast. Because of its strength, it’s also our top recommendation for a flour to blend with older, more ancient varieties like Spelt, Einkorn and Khorasan.
