Michael O’Malley is back with MOMO for a special hands-on pizza class. We will make, shape and bake the ultimate pizza, using our favorite Grist & Toll flour blend plus delicious seasonal toppings.
How do you get that pillowy texture with nice bubbles and a crisp, crackling crust? Michael and Nan will lead you through the subtleties of hand mixing a higher hydration dough formula, timing the proof, and how to shape your perfect pie. We will cover two basic dough formulas: one using commercial yeast and one using a sourdough starter.
Once we have mastered making pizza dough, we’ll focus on the toppings, including Nan’s favorite recipes for tomato sauce, swiss chard pesto and the world’s easiest and most delicious white sauce. Then we’ll put everything together and bake some fresh pizzas to enjoy together.
Each student will leave with:
Pizza dough to either freeze or bake off the following day – Super Bowl Sunday
Nan’s favorite tomatoes for red sauce
Pizza dough formula and instructions
3 sauce recipes
