Freshly Milled Hard White High Extraction Flour

High Extraction means that this flour is not 100% whole grain (100% extraction). This is an 89% extraction flour, which means that 11% by weight of the largest bran particles have been sifted away. The resulting flour is finer and whiter in color. In application it behaves more closely to a traditional bread flour. In bread baking, do not increase your hydration percentage as you normally would with our 100% whole grain flours.
